Basil-cashew-lemon dressing for DeliVerde’s salads

(vegetarian, gluten-free, not including: soy, egg, fish/shellfish)

Marjaana Pohjonen from Restaurant Kuori makes an easy dressing from DeliVerde’s basil and cashews and it especially works with DeliVerde’s different salads. The salad keeps vegan when you add beer yeast flakes but you can also use parmesan.

4 dl cashews
1 big punch of DeliVerde’s basil
2 tsp salt
3 tbsp beer yeast flakes
1 tsp Aga water syrup
1 lemon juice squeezed
1 medium shallot
1 garlic clove
2–3 cm piece of ginger
3 dl water
1 tbsp sugar

DeliVerde’s salads

Steep the cashews overnight (not required but it makes the nuts clean and soft), rinse and strain.  Mix all the ingredients in a blender until smooth. Taste and season if need be and let it stand in a fridge for a while. Mix the dressing with DeliVerde’s salads and enjoy. If you want, you can garnish the salad with roasted nuts and beer yeast flakes or parmesan.
