Broad bean casserole
for 4–6 people

Arkea is constantly increasing the amount of vegetarian food in the kitchens of the schools in Turku. However, when the amount of meat is cut down, we never compromise on the flavour or nutritional value. We design vegetarian foods to meet exact nutritional needs, and ensure that both vegetarians and those on a mixed diet will like them.
100 g crushed broad beans
1 dl water
1 kg mixed potato and onion (frozen product)
40 g chopped leek (pieces of approx. 6 cm)
2 tsp. salt
½ tsp. mixed pepper
1 tsp. mixed herbs (Provence or Mediterranean)
4 dl cooking cream or creamy oat
Leave the crushed beans to swell in water for approximately 5 minutes. Place the potato and onion mix, the swollen broad beans, and the spices into an ovenproof dish, and mix carefully. Pour the cream over the mixture. Bake at 200 degrees for 1.5 hours.
