Lemon herring of matjes herring fillet from Suomen Sillikonttori

Suomen Sillikonttori’s matjes herring fillets are used in a delicious main dish according to the recipe of restaurant Göran’s chef Mikko Leminen. Herring simmered in lemon cream is a soft delicacy which especially works with potatoes and beer.

4 pcs matjes herring fillets of Suomen Sillikonttori
0.4 l fish stock
0.4 l cream
2 lemons
2 onions
3 garlic cloves
1 leek
100 g spinach
4 portions boiled potatoes

Put the herring fillets into cold water for an hour. Cook the fish stock, the juice of two lemons and the cream until reduced by half, take the saucepan off the stove and grate lemon peels into the mixture, let it rest for 30 min. Slice the onions into rings and sauté until done. Strain the herring fillets and put them into a casserole, cover them with onions, spinach and lemon cream. Bake in the oven at 220 degrees for 10 minutes. Serve with freshly boiled potatoes and cold beer.
