White chocolate Rocky Road with Pumpernickel

Essi Rantanen got new pumpernickels for testing from Leipomo Rosten and she combined them immediately with an American classic - Rocky Road. White chocolate accents the beautiful colour of the pumpernickel perfectly! This impressive delicacy is most suitable as a Christmas present or as a gift to friends.
½ packet (40g) Rosten’s pumpernickels
400 g white chocolate
1 dl mini marshmallows
½ dl salted peanuts
½ dl dried raspberries
Melt the white chocolate in a water bath. Chop or crush the pumpernickels. Mix the pumpernickel crumbs, the marshmallows, the salted peanuts and the dried raspberries. Add the melted white chocolate and stir. Pour the mixture into a foil dish and spread it in an even layer. Let it cool in a freezer until solid (at least 4 h). Chop the chocolate with a knife into pieces and enjoy!
